Kanazawa, Japan: Yasuke Sushi Restaurant, The Last of the Food

 Grilled Eel with Cucumber, this is how it is normally served here. But,........


 He cut one so I could easily take a picture of it! He even wrapped the seaweed differently so it would look beautiful in a photograph!


 Here is the Anago, a different type of Eel. It is grilled on a (I think) Konbu leaf.


 He cuts and folds the Anago very artfully.

 Here is the finished and ready to eat Anago! You eat it just like this since there is salt on it.


 This is Sardines (Aji) soaking in some kind of marinade.


 This is the sardine after it has finished marinading and minus the bones and skin.


 This is the final dish, Negi toro! Roughly chopped tuna with thinly sliced onions!

It's easier for me to eat these cut, but traditionally they are eaten as one roll.

Now, I'm going to go raid my refrigerator for some food that isn't going to cure my sushi craving...

Kanazawa, Japan: Yasuke Sushi Restaurant, The Food!

 The sushi masters' deshi, he is slowly being taught the ropes. He is allowed to do more things than 2 years ago! He can now prepare or finish some of the dishes!


The squid. Unbelievably soft and easy to eat! No soy sauce needed!

 Zuke Tuna, tuna marinated in soy sauce for about 20 minutes

 Look at the perfectly layered food! It's rice topped with seaweed, soy sauce marinated tuna, grated Nagai potato, sea urchin and wasabi!

Kanazawa, Japan: Yasuke Sushi Restaurant

Sato and I came to Kanazawa to come to this restaurant. We decided to stop at the fish market since we were going to be in the area. This restaurant is about 5 minutes away from the fish market by car.


To eat at this restaurant is by reservation only and usually you have to make a reservation at least a few months in advance.


 Of course, if you know someone who knows the sushi master well you can get a reservation with short notice!  


 This is the sushi master! He is about 78 years old, but his hands still move very fast!


As seen here. Everything at this restaurant tastes amazing and served with beautiful presentation.


If you ever have a chance to eat here you won't regret it. He only uses the freshest catch of the day. The menu usually has your basic tuna variations, squid, sea urchin, etc. Of course, if the catch of the day wasn't good enough it won't be available.


 As you can see in this picture he sometimes moves with his entire body and not just his hands. He makes everything look so easy, but I guess that only happens with years of hard training.


 There is one table that can seat four people. He is making a platter for them to eat. I recommend eating at the counter. It is much more fun! Plus, he will talk to you a little bit more if he can.


 Even though he is moving fast and very busy, he is carefully watching your pace and expressions.


 Here is a picture of, not matches but, toothpicks! You can see some of them still have the natural wood on the outside. I couldn't resist using one these, I'm sure they are more expensive than the typical toothpick.

He's working hard, but you can see in this picture that he enjoys his work. I'm sure that has a lot to do with his delicious and well made food!

The rice alone is amazing! When he makes a nigiri the rice is still very soft! It's like he is squeezing air into the rice and not squeezing the rice. Even though the rice is formed gently it can keep it's shape pretty well! Only every once in a while does a small piece fall off.

Just talking about this restaurant and looking at these photos makes me hungry for the best sushi that I have ever eaten. I'm positive sushi can NOT get any better than this! If you get a chance to eat here, I'm sure you will understand what I mean.
